Easy Microwave Hello Kitty Mochi

Hi! My name is Sammi Phan. This is my very first blog and tutorial. I have been fascinated with anything Hello Kitty ever since I was a little girl. I came upon finding many Hello Kitty molds and bought them at my local Sanrio Stores. I had them for such a long time and don't know quite what to make out of them. Since it is the beginning of the New Year, 2013, I figure that I'll make Japanese mochi. Mochi eaten on New Year's Day often brings luck.

I will be teaching how to make Japanese mochi into a shape of Hello Kitty. It looks difficult but it is quite easy!

Easy Microwave Hello Kitty Mochi

Ingredients (makes 30 servings)

4 cups mochiko (2 10-oz pkgs)
2-1/4 cups sugar ( I used 1-1/2 cups because my family don't like their mochi too sweet)
1 can coconut milk (12-oz)
2 cups water
1 teaspoon vanilla extract
3-4 drops of red food coloring (you can add more if you want a little brighter pink)
1 cup potato starch (katakuriko)
1 cup kinako (roasted soybean flour)

Directions:

1. Mix the mochiko, sugar, coconut milk, water, vanilla extract, and red food coloring in a bowl until smooth.

2. Grease the mold with Pam (make sure that the Pam is smooth a the bottom of mold, you do not want Hello Kitty's face to be blotty at the end result. You don't have to grease the mold every time you cook.. but should grease after three rounds).
3. Pour batter into mold. Covering only to a little over Kitty's whiskers. Then place plastic wrap loosely over mold.
4. Microwave for 4 minutes. (Remember to let it cool for 2 minutes before handling mold. It is hot and can burn your skin. If need, please use oven mitts.)
5. Remove the the mochi from mold. Just pop it out by flipping it face down onto a chopping board or onto wax paper.
6. Repeat until batter is all gone. ( This is the only hard part. LOL. It will help if you had more than one mold. I only had one. Note to self: Buy 2 more molds!)

The next part is the patting on the potato starch (katakuriko) and kinako (roasted soybean flour) to the finished Hello Kitty mochi. I usually do half in corn starch and half in kinako. I place either flour on wax paper or plate, roll the finished mochi , and pat off any excess flour.

After everything is done.. I place my mochi in a plastic container. Remember mochi has a short shelf life period.. Please eat it within a week.

I hope you will try this tutorial and let me know what you think! Happy Cooking and I'll see you very soon!

XOXOXO: Sammi

****** You can buy the mold on e-bay, etsy, amazon, artfire, etc.
